Divorced/single dads: how are you eating?

I've been divorced for four years. When the kids are around I "wake up" emotionally and mentally, and make sure there's healthy, complete and tasty meals, and I'm proud of being able to care for my kids in this way.

But on the "off days" when I'm by myself my ADHD and depression rears its head and I am always scrambling, improvising, eating out, or snacking to get through the day. This is true even if there's leftovers available. I'm not sure if I don't like leftovers anymore, or if there's some other mental block. I am treating my depression (still a work in progress).

Today I'm testing a method where I'll buy things that are very easy and require almost zero prep (e.g. salmon fillets, some sort of topping to sprinkle on, broccoli, and pre-seasoned frozen potatoes) with the idea that I'll put it all on a roasting pan and stick it in the oven, and voila, almost no work.

Did anyone else struggle with eating healthy by yourself? Would appreciate knowing if anyone has a routine to deal with this.

(The flair is "Advice" but I'd also appreciate hearing from dads who are simply still struggling with this).
